Azerbaijani Persimmons Now Available Year-Round Thanks to Innovative Non-Thermal Pasteurization Technology
Specialists from Supreme Pharmatech in Azerbaijan, in collaboration with their colleagues from Supreme Pharmatech Thailand, have achieved a technological breakthrough by developing the world’s first non-thermal pasteurization process for Azerbaijani persimmon paste.
Azerbaijani persimmons are not only a symbol of the region but also a highly sought-after export product. However, their perishable nature has long limited storage and transportation over long distances. Traditional thermal pasteurization methods negatively impacted the quality of the paste, destroying a significant portion of its nutrients, natural flavor, and vibrant color.
Using a unique plasma-pulse system, the company’s specialists succeeded in creating a process that preserves all the nutritional properties, taste, and color of the product. Compared to standard methods, this revolutionary technology demonstrated remarkable results:
• Processing efficiency increased nearly twofold.
• Processing time was reduced by 90%.
• Production costs decreased by 85%.
This innovation allows persimmon paste to remain fresh for up to 12 months, opening up new opportunities for distribution to distant markets with higher purchasing power.
Looking Ahead: New Opportunities for the Region’s Agriculture
The successful implementation of non-thermal pasteurization technology is expected to boost the development of Azerbaijan’s agricultural sector. In the near future, Supreme Pharmatech plans to test this technology on other agricultural crops from Azerbaijan and neighboring countries. This will enable products to be exported under more favorable conditions, expand market reach, and enhance the global competitiveness of Azerbaijani agricultural goods.

World’s first testing of pulse nano treatment method
From December 15 to December 22, 2024, specialists from Supreme Pharmatech Manufacturing (Azerbaijan) tested a new method of pulse nano treatment of freshly squeezed pomegranate juice grown in Azerbaijan.

Pomegranate juice also helps improve blood circulation and reduce the risk of cardiovascular disease. Of particular interest is the anti-cancer potential of pomegranate juice, as studies show its ability to slow the growth of tumors and prevent their formation.
